What JD said. The old gas, mixed with the cold temps both, will result in less then spectacular performance unless the bike gets warmed up well. I have mine leaned out pretty good in the pilot circuit, and I noticed yesterday on the way home, I can get it to crackle a bit in the exhaust, on the harder decels with the temps around 60 after a ten mile ride.
The Seafoam was a good move, and if you got it circulated through the carb when you rode, that'll help in the carb. The Seafoam won't bring the gas back, but it will help whats in there burn off, and, help clean up the inside of the carb. I'd drain off the old gas(use it in your lawn mower, or dump it in your truck), add about 4 to 8 ounces of Seafoam to the fresh gas when you put it in, and ride it aggressively for about 30 or 40 minutes to get the Seafoam through the carb again.
When you have some better input, and warmer weather so you don't freeze your you know whats off, see if the flat spot is still there, and check back.
