Most people aren't aware that the delicacy known as caviar is actually sturgeon eggs!

Yes you can eat them but they are VERY heavily regulated as to what size you can keep. As for the caviar it is not harvested in the USA because you have to kill the fish. The Beluga sturgeon is an endangered species from over fishing and poaching but the rich must have their caviar

It was an awesome day forsure!.....Sturgeon are catch and release only, all sizes! The first one we got was around 4ft, second was 84in, and the third one was 80.5in! The two larger ones were roughly 200lbs and pushing 50yrs old.

When I was a kid many moons ago in Wa. state we lived on a farm above the Snake River. My dad would catch 6-10' long Sturgeon and hang them up in the shop from the rafters like a deer and then cut them up into steaks. Very good eating!
