Yes you can eat them but they are VERY heavily regulated as to what size you can keep. As for the caviar it is not harvested in the USA because you have to kill the fish. The first one we got was around 4ft, second was 84in, and the third one was 80.5in! The two larger ones were roughly 200lbs and pushing 50yrs old. My dad would catch 6-10' long Sturgeon and hang them up in the shop from the rafters like a deer and then cut them up into steaks.
